So the three paths you wish to backup are as follows :

  (1) /Users/Johnno/Documents
  (2) /Users/Johnno/Music
  (3) /Users/Johnno/Pictures

If this is correct then the following excludes file should work if you specify "/" as the source for the backup. Essentially, this will backup just the three directories specified above.

+ Users
+ Users/Johnno
+ Users/Johnno/Documents/***
+ Users/Johnno/Music/***
+ Users/Johnno/Pictures/***

An alternative approach is to setup three separate backups configurations. One advantage to this approach is that you may want to backup the Documents directory five times every day, while two times per day may be adequate for the Pictures directory and just once per day for the Music directory could be okay.

Test either of these approaches out and see if you have the expected results within your backup destination directory.

Finally, keep in mind that if you go with the excludes file approach you may loose some of the benefits of a future release which will offer backup validation by keeping track of multiple checksums for the backup sets.
